Perfect Potato Salad

While you can make potato salad with any size and any variety of potato, Homebasics ( recommends using new, small, low-starch, red boiling potatoes. They cook fast, look pretty and taste out of this world.

Perfect Potato Salad

2 lb small red or white potatoes 1 kg

1 cup Hellmann's Mayonnaise 250 mL

2 tbsp Hellmann's Dijonnaise 30 mL

2 tbsp chopped fresh dill or parsley 30 mL

2 tbsp white vinegar 30 mL

1/2 tsp salt 2 mL

1/4 tsp pepper 1 mL

1 cup chopped celery 250 mL

1/2 cup chopped green onions 125 mL

Cook potatoes in boiling salted water 15 minutes or until tender. Drain well, cool and cut into quarters. In large bowl, combine Hellmann's mayonnaise, Dijonnaise, dill, vinegar, salt and pepper. Stir in potatoes, celery and onion. Cover and chill 1 hour to blend flavours. Serve on lettuce lined platter and garnish with chopped fresh parsley.
