Roast Turkey with Cranberry Orange Glaze
« on: September 02, 2007, 04:37:30 PM »

(NC)—Maple syrup, cranberry juice and orange marmalade combine for a glaze that could become your family favourite.

Prep Time: 25 minutes

Total Time: 4 hours (approximately)

3/4 cup 188 mL orange marmalade

3/4 cup 188 mL frozen cranberry juice concentrate, thawed

3 tbsp 45 mL maple syrup

1 1/2 tbsp 23 mL balsamic vinegar

1/2 tsp 3 mL salt

1 1 Butterball Turkey 15 lb / 7 kg

1. Prepare turkey as per package directions.

2. Combine marmalade, cranberry juice, maple syrup, vinegar and salt in small heavy saucepan. Bring to boil over medium heat, stirring frequently. Reduce heat to low. Cook uncovered, stirring frequently for 12-15 minutes, or until glaze is reduced to about one cup.

3. About 45 minutes before the turkey is done brush generously with glaze. Place foil loosely over turkey and cook until meat thermometer reaches 180°F in the deepest part of the thigh.

4. Brush with remaining glaze. Let turkey stand 15 minutes before carving.
