(NC)—Special coffee drinks after a meal are a grand finalé worth waiting for. Hardly an afterthought, even just the aroma of premium brews from say, Kenya, Colombia, or Brazil, will keep your guests poised for yet one more taste treat. So here are two special recipes from Tchibo, a European favourite:

Tchibo Tip: Once brewed, prevent coffee from burning by pouring it into a carafe or thermos to keep it hot. Relax because the subtle flavours of the Arabica bean coffee get livelier as it cools. If, however you insist on drinking it very hot, brew less at a time.

CAFÉ PARADISO

Ingredients:

4 tbsp Brazil filter coffee

1 tbsp cocoa powder

1/2 tsp ground cinnamon

4 shots (4 oz) coffee liqueur

Whipped cream

For 4 servings: Put coffee, cocoa and cinnamon in a coffee filter and brew 4 cups. In heat resistant glasses, or mugs, pour one shot of coffee liqueur each and add the mocha-cinnamon coffee brew. Top with whipped cream and sprinkle with cinnamon.

KENYA CREAM

Ingredients:

1 cup Kenya filter coffee

1 tbsp brown sugar

1 shot (4 oz) Irish whiskey

Heavy cream, slightly whipped

For individual servings: Pour fresh brewed coffee into a pre-warmed, heat resistant glass to 3/4 full. Add brown sugar and stir until dissolved. Add Irish whiskey. Top with cream and serve immediately while hot.
