Mushrooms with Mediterranean Tuna Dip

(NC)—An Italian inspired quick and easy dip.

Preparation Time: 10 minutes

1 cup packed Italian parsley leaves 250 mL

1 cup light mayonnaise 250 mL

1 can (170 g) flaked or chunk light tuna,(packed in water), drained 1

3 tbsp lemon juice 45 mL

3 tbsp drained capers 45 mL

5 anchovies, chopped (or 2 tsp /10 mL anchovy paste) 5

1 clove garlic 1

1 lb fresh Mushrooms (thickly sliced, small whole or halved large )500 g

Garnish: fresh parsley, minced

In food processor combine parsley, mayonnaise, tuna, lemon juice, capers, anchovies and garlic; process until smooth. Transfer to serving dish, garnish with parsley, cover and chill until serving. Place on tray or in a basket and surround with mushrooms for dipping.

Makes 1 3/4 cups (425 mL) or 10-12 servings

Variation: Add 1 tsp Dijon mustard and 2 hard cooked eggs.
