Multi-Grain Muffins

(NC)—These muffins are perfect for breakfast or as a filling snack.

1 cup water 250mL

1/4 cup Red River Cereal 50mL

1 egg 1

1/3 cup Crisco Canola Oil 75mL

3/4 cup buttermilk 175mL

3/4 cup brown sugar 175mL

1 tsp vanilla 5mL

1 1/2 cups Robin Hood Nutri Flour Blend 375mL

1/2 cup Robin Hood Oats 125mL

1 tsp baking powder 5mL

1 tsp baking soda 5mL

1 1/2 tsp cinnamon 7mL

1/4 tsp nutmeg 2mL

1/4 tsp salt 2mL

Preheat oven to 400ºF (200ºC). Grease 12 muffin cups.

Bring water and Red River Cereal to a boil in medium sized saucepan. Reduce heat to low and simmer, covered 10 minutes, stirring occasionally, until mixture has thickened. Cool 5 minutes.

Meanwhile, in a large bowl, combine egg, oil, buttermilk, brown sugar and vanilla. Add cooked cereal. Add remaining dry ingredients and stir until blended.

Place in prepared muffin cups and bake in preheated oven, 18-20 minutes until golden brown. Let cool in pan 5 minutes, then cool on wire rack.

Prep Time: 20 minutes

Baking Time: 20 minutes

Makes: 12 muffins

Freezing: Excellent
