Ingredients:

• 1 lb (500 g) lean ground beef

• 1/2 cup (125 mL) onion, chopped

• 1 1/2 cup (375 mL) frozen corn (thawed)

• 19 oz (540 mL) diced tomatoes or salsa

• 3/4 cup (175 mL) ketchup

• 2 cups (500 mL) Rice Krispies cereal

• 1/2 tsp (2 mL) salt

• 1/2 tsp (2 mL) chili powder

• 12 (8 inch) flour tortillas

Optional toppings: shredded cheese, chopped green onions, sour cream, salsa

Preparation

1. In large skillet, cook ground beef and onion over medium heat until meat is browned. Stir in corn, tomatoes, ketchup, cereal and seasonings. Simmer over low heat about 10 minutes, stirring frequently.

2. Warm tortillas in oven or microwave. Spoon 1/2 cup (125 mL) of the meat mixture onto each tortilla. Add toppings. Serve immediately.
