Cranberry Mint Sparkler

1 1/2 cups (375 mL) lightly packed fresh mint leaves, washed and dried

3 lemons (approx.)

1/3 cup (75 mL) liquid honey

1 bottle (1.89 L) Ocean Spray 100 % Juice Blend-Cranberry

2 cups (500 mL) sparkling water

fresh mint for garnish

Place mint leaves in a large pitcher. Juice two of the lemons; measure 1/3 cup (75 mL) juice. Thinly slice the remaining lemon and reserve. Add the lemon juice and honey to the pitcher.

Use a mojito muddler or small wooden spoon to mash the leaves until fragrant. Pour in the cranberry juice blend and sparkling water. Strain or pour mixture into ice filled glasses. Garnish with additional fresh mint and a reserved lemon slice. Serve immediately. Makes 8 servings.
