New Wave Waldorf Sandwich

8 slices  Country Harvest +Plus Multigrain Crunch Bread

4 cups (1L) cooked chicken, cubed

1/3 cup (75 mL)  light mayonnaise

1 celery stalk, finely chopped

1/2 cup (125 mL) dried currants

1/3 cup (75 mL) toasted pine nuts

1/4 cup (50 mL) chopped fresh parsley

1/4 tsp (1 mL) salt and pepper

1 Tbsp (15 mL) fresh lemon juice

4 leaves Red Tipped leaf lettuce


1. In a large bowl, mix together chicken and mayonnaise.

2. Mix in celery, currants, pine nuts, parsley, salt, pepper and lemon juice.

3. Lay slices of bread on counter. Line with lettuce.

4. Mound 1 heaping cup of chicken mixture on top, flattening slightly.

5. Top with bread slices.

Makes 4 servings.
