
(NC)—Sitting down to a breakfast of hearty French Toast is one of the weekend's great pleasures. Use whole wheat or white bread – whichever you prefer.
Preparation time: 15 minutes
Soaking time: 10 minutes
Cooking time: 6 minutes per batch
Makes: 4 servings
Ingredients:2 apples
squeeze lemon juice
1/2 (125mL) cup water
1/3 cup (75mL) maple syrup
1/4 tsp (1mL) cinnamon
3 eggs
1 cup (250mL) Almond Fresh, original or vanilla
1 tbsp (15mL) brown sugar
1/4 tsp (1mL) each salt, nutmeg and ginger
4 to 6 slices Italian, brioche or sourdough bread, sliced 1/2 to 3/4 inch (1 to 2 cm) thick
1 tbsp (15mL) butter
Directions:1. Peel apples if you like. Core and cut into thin wedges. Place in a medium saucepan along with lemon juice and 1/2 cup (125 mL) water. Set over medium-high heat. Cover and simmer gently to soften apples, 2 to 3 minutes. Drain. Add maple syrup and cinnamon to pan. Warm just before using.
2. Place eggs, Almond Fresh, sugar, salt and spices in a 9 x 3 inch (3 L) baking dish. Whisk until blended. Add bread. Soak 5 minutes. Turn bread and continue to soak 5 more minutes.
3. Melt butter in a large non-stick frying pan set over medium-high heat. When butter bubbles, cook bread in two batches without crowding pan. Adjust heat as necessary. This will take 6 to 8 minutes in total, turning part way through, until golden brown on both sides. Keep warm in the oven while cooking second batch, adding more butter if needed. Divide among 4 plates, spooning maple syrup apples over top.
