(NC)—During the winter months it can be easy to go into hibernation, but with this easy recipe you go on a tropical vacation in your own kitchen.

Serves: 4

Prep Time: 10 minutes

Cook Time: 20 minutes

75 mL (1/3 cup) Hellmann's Real Mayonnaise

22 mL (1-1/2 tbsp) Cajun spice

120 mL (1/2 cup) shredded Mexican blend cheese, divided

30 mL (2 tbsp) finely chopped parsley

4 boneless, skinless chicken breast halves

60 mL (1/4 cup) fresh bread crumbs

Preheat oven to 425°.

Combine Hellmann's Real Mayonnaise, Cajun spice and 60 mL (1/4 cup) of cheese. Spread on chicken, then sprinkle with crumbs. Bake at 425° for 20 minutes or until thoroughly cooked. Sprinkle with remaining cheese; heat 1-2 minutes until cheese is melted.

Not all fats are bad for you. Good fats like omega-3 fats help our bodies to absorb a range of vitamins such as vitamin A, D, E and K. Vegetable omega-3 fats are an essential part of a healthy balanced diet because our bodies do not naturally produce them. So we have to eat them daily, through foods like canola and flaxseed oil, walnuts, or mayonnaise—as is used in this recipe.
