Easy herb tomato soup
1 tin condensed tomato soup
350ml water
1 teaspoon mixed herbs
1 small onion finely diced
2 tablespoons oil
Put oil in saucepan, when hot add onion, fry until
translucent. Add rests of ingredients, simmer for 5-6 minutes, add
salt and pepper to taste. Serve with cream crackers and butter.
Quick minestrone soup
1 tin vegetable soup
1 tin baked beans
56g macaroni
550ml water
Combine all ingredients in saucepan and cook until macaroni is soft.
Add salt and pepper to taste, serve with grated Parmesan and garlic bread.
Easy onion soup
56g butter or margarine
4 large onions thinly sliced
2 beef stock cubes
1 liter of water
Add butter to saucepan, when melted add onion and fry until golden.
Add water and stock cubes, simmer for ten minutes. Add salt and peppers to taste,
serve with a round of cheese on toast.
Bacon and vegetable soup
450g bacon miss-cuts. Cut into bite sized pieces
½ cup lentils
1 large carrot grated, the equivalent in turnip grated,
1 medium leek thinly sliced
2-3 medium potatoes diced,
3 liters of water
2 chicken stock cubes
Put water in saucepan, add lentils, bring to the boil, turn heat
down to simmer. Add rest of ingredients. Simmer for 20 minutes. Add potato,
simmer further 20 minutes. Add salt and pepper to taste. Serve with French stick and butter.
Easy crab and sweet corn soup
275g tin sweet corn
175g tin crab meat
1 teaspoon ginger puree
1 egg white mixed with 1-teaspoon sesame oil
1 tablespoon dry sherry or rice wine if available
1 teaspoon sugar
1 liter of water
1 chicken stock cube
1 tablespoon corn flour mixed with 2 tablespoons water
Put water in saucepan with stock cube. Bring to boil. Add corn and simmer for 15 minutes.
Uncover and add rest of ingredients, except crab and egg sesame mix. Bring back to boil,
then lower heat to simmer, add crab and slowly pour in egg and sesame mix stirring all the time.
Serve with chines steamed buns.
Quick lentil and bacon soup
1 tin lentil soup
112g bacon miss-cuts diced
400ml water
1 teaspoon mixed herbs
Put water into saucepan and bring to boil. Add bacon and simmer until tender. Add rests
of ingredients, bring back to simmer. Serve with potato scones.
Quick chicken noodle soup
Put 1 liter of water into saucepan. Add 1½ chicken stock cubes,
bring to boil, turn heat down and add 112g of egg noodles. Simmer with lid on
until noodles are tender. If desired, a small amount of pre-cooked chicken
can also be added. Serve with prawn crackers.
Quick chicken and rice soup
Put 1lt water into saucepan. Add 1½ chicken stock cubes, bring to boil,
turn heat down and add 112g rice, simmer with lid on until rice is fluffy. If
desired, a small amount of pre-cooked chicken can be added.
Serve with prawn crackers. Boxed crackers can be bought at any Chinese
grocers, and it only takes moments to deep-fry them.
Quick pea and ham soup
1 tin garden peas,
½ beef stock cube
125ml water
56g ham off cuts diced
Put peas and water into blender. Blend for a few seconds. Pour into saucepan, add
ham and stock cube. Heat through. Add salt and pepper to taste. Serve with baps and butter.
Corn flour glaze
Mix 1 teaspoon corn flour with 1 teaspoon water.
Place 125ml water into small saucepan and bring to boil, turn heat down. Add corn flour
mixture stirring until smooth. Slightly let cool.
